Smokey's peri peri marinade
« on: July 28, 2017, 04:31:29 PM »
Anyone has Mr Smokey's peri peri chicken recipe handy?

I remember I cooked a couple of mean chickens using it, and can't seen to find it in the forum

G'day

It's in the old forum. There's a link in the general discussion section of this forum to the old forum. I'm going to have a good read tonight so I don't forget what's there!

In leui of Smokey, Peri peri is usually a direct cook. You can continuinly baste to build a crust layer and stop it burning. In the original thread he mentions turning it so that says direct to me.

Still Cue'in

Direct skin side down over moderate heat till that side is fully done and coloured. Then flip and grill on low or near indirect till the bird is fully cook.
Depends on the bbq.
Time to do this one again I think, Its a great recipe. The smell wafting around the house is just out of this world.
