In other words Captain a meat thermometer is your best friend :)

I never worry over it much in the Q but in the kettle ambient conditions can make a huge difference.

:) Very true, although I've been cooking for so long I mostly find intuition is sufficient :)

It's a family thing, we all enjoy cooking, I think I'm possibly the only one with a couple of meat thermometers, but that's because I Q, only one of my brothers does much and he likes his meat done low and slow whilst he has a few beers and keeps an eye on it so he's never seen the need :)
