Cheese first or on Top?

On some cooking shows I have see the Cheese over the Pizza sauce and many add the cheese last.

The "Boss" likes and prefers the old Hawaiian type so its Hawaiian we have, I add the pizza cheese last.

What is your preferred method and why?

On top normally. If I'm doing a smokey special that has way too much toppings, Ill put just a little underneath. Particularly if I'm using a little cheddar as cheddar will form a hard crust if put on top.   If using just motz, Then just on top.

Grated Parmesan on sauce and Mozzarella on top. Yum :)

Always on top for me, but I always do a mix of Mozzarella, cheddar and a touch of Parmesan.

 It varies in Italy, depending upon north and south. That sounds sort of northern, I learned most of my Italian cooking way down south with my old Italian Momma.

She's long gone, to my sorrow, so I can't ask her, but her handwritten recipes she left me seem to say cheese on top.

Then again she was always a flurry in the kitchen, and probably not consistent, but her food was to die for :)

not much cheese though
and I was surprised by basil on top going in the oven
I do that and was thinking of putting it on top of a hot one as it came out
Not now.

Around here my wifes fave is Margheritta sometimes with hot salami
Salami is the last thing
I like Capricosa and the bacon olive mushroom and green capsicum is the last thing except the splash of oil to brown the veg
The salami doesnt get oil as the fat  browns the top.

There was a Venetian Pizza shop near us as a kid and they put the cheese on top everything steamed under the cheese and the cheese browned.
It was a different taste but not as clean a taste as the Napoli style (closer to a home made version of a fast food pizza)

I remember ones in Sicily that  had everything mixed together and put on a thicker oblong crust
There was bowls of cut veg oil and  cheese mixed  and handfuls of the mix was put on.
